This is pretty exciting topic! I suspect your observation is true that the ways most users think about or need to work with their data will often be different than the underlying farmOS data model. (Without necessarily making the farmOS data model a bad choice.)
To provide another example of that, I can share some small samples of records my folks have kept in the past few years.
In my opinion, the key take-away from these is that - at least for their use-case - there is a need to make the same kind of record/observation/measurement with similar fields many times associated with different assets/plantings/etc. A tabular format is conducive to that, but clicking/tapping around between different pages between capturing each record isn’t.
